Travel insurance usually needs to cover the time between the date of your departure and your first day at work in Germany. Some embassies however ask for a minimum coverage of 6 months, even though this might overlap with your German health insurance start date.
In case the official embassy checklist states this, or in case the embassy explicitly requests a minimum coverage of x months during/after your appointment, it is advisable to comply with the embassy’s requirements in order to not obstruct the visa issuing process.
